Recipe Ingredients for Pakistani Lentil Curry

2 c dry lentils
6 cups water
10 garlic cloves, chopped
1 1/2 teaspoons salt
1 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1/2 teaspoon ground turmeric
2 tablespoons unsalted butter
1 onion, sliced
1 green bell pepper, sliced
2 teaspoons ground cumin
1/4 cup fresh cilantro, chopped

Recipe Directions for Pakistani Lentil Curry

  1. Soak the lentils in plenty of cold water for 1 hour to overnight. Drain and rinse.

  2. Place drained lentils into a large saucepan or Dutch oven. Pour in the 6 cups of water, then add garlic, salt, coriander, cayenne and turmeric. Bring to a boil, turn down to simmer, cover, and cook for 30 minutes. Stir occasionally. Add more water if needed.

  3. While the lentils cook, in a medium skillet, melt the butter. Add the onion, bell pepper and the cumin. Cook on low until very soft, about 15 minutes. Remove from heat and add the cilantro.

  4. When lentils are done, add the onion/bell pepper mixture.

  5. Eat plain, or serve over cooked rice.
