Recipe Ingredients for Pain de Mie

14 oz (1.75 cups) water, lukewarm 80F
2 1/2 tsp yeast
1 1/2 lb (6 cups) bread flour
1 1/2 tsp milk powder
4 tsp sugar
1 1/2 tsp salt
1/2 oz (1 tbsp) unsalted butter
1 tbsp unsalted butter (melted, for greasing the pan)

Recipe Directions for Pain de Mie

  1. Place water, yeast, flour, milk powder, sugar in mixer bowl. Mix on low speed until incorporated. Mix on medium for 2 minutes. Dough should clean the sides of the bowl.

  2. While running, add salt and softened butter. Mix until smooth and elastic and 78 degrees, about 10 minutes.

  3. Ferment 45-60 minutes

  4. Deflate, rest 15 minutes. Grease the pan.

  5. Shape loaf. Put into pan. Let rise 1.5 hours.

  6. Preheat oven to 500 degrees, bake at 475 degrees about 45 minutes
