Recipe for Pain de Campagne, French sourdough bread.

Recipe Ingredients for Pain de Campagne

200 ml water
175 g white flour
50 g wholewheat flour
7 g dried yeast
80 ml water
120 ml water
225 g white flour
50 g wholewheat flour
25 g spelt flour
1/5 tsp salt
1/2 tsp sugar

Recipe Directions for Pain de Campagne

  1. Combine the first four ingredients and mix to a dough.

  2. Leave 8 h or overnight.

  3. Make up the dough with the remaining ingredients and knead until a good dough is formed.

  4. Leave to rise for 45 minutes, until the dough has doubled in size.

  5. Knock back and knead into round loaf shape, place on floured baking tray. Leave to rise for an hour.

  6. Bake in hot oven, 220 degrees celsius, for 40 minutes.
