Quick and easy Thai-style stir-fry. Sour, salty, and just a little sweet. For a vegetarian-friendly version, substitute tempeh for chicken.

Recipe Ingredients for Pad Thai-Style Stir-fry

1 breast, bone and skin removed Chicken, Breast, Meat Only
0.33 cup Lime Juice, Canned Or Bottled, Unsweetened
1 tbsp Garlic Powder
1 medium (2-1/2" dia) Onions
4 tbsp Soy Sauce
1 tsp Spices Crushed Red Peppers
10 oz Broccoli Slaw
0.5 box Fettuccine Dry
1 tbsp Extra Virgin Olive Oil
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 oz Peanuts, All Types, Dry-roasted

Recipe Directions for Pad Thai-Style Stir-fry

  1. Prepare pasta as directed on package.

  2. Cut chicken breast into small, bite-size pieces. Stir-fry in oil on medium-high heat.

  3. Slice onion, add to pan.

  4. Add lime juice, soy sauce, and spices, reduce heat. Bring to simmer.

  5. Add slaw, and water as needed to increase sauce volume (you'll be mixing it with the noodles, and you want it to coat.)

  6. Drain noodles and return to pot. When slaw is tender, add mixture to noodles and toss to combine.

  7. Garnish with chopped peanuts and scallions.
