Not too spicy but you can reduce the amount of chili paste for less heat. Rice noodles can be replaced with whole wheat spaghetti noodles. Sometimes if I have a leftover piece of chicken, pork or steak, I add cut it up and add it in. The Italian salad dressing is a substitution for tamarind.

Recipe Ingredients for Pad Thai

8 ounce rice noodles
2 tbsp Italian salad dressing, low calorie
1/3 cup boiling water
1/4 cup ketchup
2 tbsp lime juice (juice from 1 lime)
5 tbsp soy sauce
1 tbsp white sugar
1 tsp chili paste (sambal)
1/4 cup canola oil or olive oil
1/2 pound firm tofu, drained and cubed
5 cloves garlic, minced
4 eggs, beaten
3 cups bean sprouts
1/2 cup peanuts, coarsely ground
1/4 cup chives or garlic chives, chopped

Recipe Directions for Pad Thai

  1. Combine Italian dressing, ketchup, lime juice, soy sauce, sugar, and chili paste in a bowl.

  2. Heat the vegetable oil in a wok over medium-high heat; stir in the garlic and tofu until the tofu begins to show brown edges, 3 to 4 minutes. Pour in the eggs, and scramble for 30 seconds, then add the noodles, sauce, bean sprouts and chives. Cook and stir until the noodles are separated, heated through, and covered with sauce, about 5 minutes.

  3. Add rice noodles to pot of boiling water, reduce heat and cook for 1-2 minutes until softened. Do not overcook.

  4. Drain noodles and mix with stir fry.

  5. Garnish with chopped peanuts.
