One of the many forms that this meal can take. This one does not include fish sauce or soy, to cut down on the sodium. It still tastes wonderful, though, and gets plenty of salt from the Thai sweet chili sauce and the ketchup. Even fine Thai chef's (Keo from Keo's restaurant in Honolulu) use ketchup in the recipe. Chicken or shrimp can be substituted for the imitation crab.

Recipe Ingredients for Pad Thai

8 oz rice noodles
1 large sweet red pepper
3 small carrots
4 ozs. mushrooms
3 cloves garlic
1 medium onion, chopped
4 ozs.
3 tbs. sweet
2 tbs ketchup
2 tbs olive oil

Recipe Directions for Pad Thai

  1. Soak broad rice noodles in warm water for around 20 minutes while preparing the vegetables.

  2. Chop vegetables into chunks and stir fry in olive oil in a large non-stick pan.

  3. When vegetables are tender add minced or grated garlic and imitation crab.

  4. Strain noodles and add to pan. Add sweet Thai chili sauce and ketchup and a bit of water to keep things from getting gummy.

  5. Toss or stir frequently and continue cooking until noodles are tender, about 10 minutes.

  6. Serve in a bowl, optionally topping with bean sprouts and peanuts.
