The closest we can come to imitating Orchid Cafe's wonderful recipe.

Recipe Ingredients for Pad Thai

1/2 pound rice noodles, soaked until pliable
1 1/2 cups boneless chicken breast, thinly sliced/chopped
2 tbl vegetable oil
1 small onion, finely diced
1/3 cup shredded carrot
1 tbl garlic
1 tbl soy sauce
1 tbl fish sauce
2 tbl sugar
2 tbl vinegar
1/2 tsp white pepper
2 eggs, beaten
1 cup bean sprouts
1/3 cup green onions, cut in 1/2" pieces
1 tbl chopped peanuts
1 tbl lime juice

Recipe Directions for Pad Thai

  1. Combine soy sauce, fish sauce, sugar, vinegar, and white pepper. Set aside.

  2. Heat the oil in a large frying pan until smoking hot. Add the chicken, onion, carrot, and garlic. Stir fry until chicken is no longer pink, about 2 minutes.

  3. Add noodles and sauce mixture. Stir fry until noodles are tender, adding a little water if the noodles absorb too much.

  4. When noodles are soft, push to one side and pour the beaten eggs into the center of the pan. Allow to cook for about 1 minute, or until set. Scramble with the spoon and stir the noodles into them to thoroughly combine.

  5. Add bean sprouts, green onions, and chopped peanuts and stir fry another minute or until bean sprouts and onions just soften.

  6. Sprinkle with lime juice and serve immediately.
