We got this recipe from a Thai cookbook. It is a bit spicy so use the Red Chillies to your own taste. We also added a bit of Pad Thai sauce as finished product was a bit dry. Pad Thai sauce is a Tamarind Sauce.

Recipe Ingredients for Pad Thai

14 oz rice noodles, thick stick
2 tbs olive oil
2 cloves garlic, chopped
2 tsp red chili, chopped
1 1/2 lbs chicken, thinly sliced
1/4 cup chives, chopped
2 tbs fish sauce
2 tbs lime juice
2 tsp light brown sugar
2 eggs, beaten
1 cup bean sprouts
1/4 cup fresh cilantro
1/4 cup peanuts

Recipe Directions for Pad Thai

  1. Soak rice stick noodes in warm water for 10 minutes or until soft. Drain and set aside. Heat oil in a wok or large frying pan. When Oil is very hot add the garlic, chillies, and chicken. Stir constantly for 2 minutes. (Until Chicken is cooked)

  2. Add the chives and drained noodles to the wok. Cover and cook for 2 minutes.

  3. Add the fish sauce, lime juice, sugar and eggs to the wok. Toss well. Cover until heated through (1 min)

  4. Sprinkle with sprouts, cilantro, and peanuts and serve.
