Recipe Ingredients for Pad Thai

7 oz. Rice Noodles
3 tbs. sugar
1 tbs. lime juice
2 1/2 tbs. Fish Sauce
1 tbs. rice vinegar
1 tsp. paprika (optional)
1 egg, well beaten
3 tbs. vegetable oil
1 tbs. garlic, minced
6 oz. tofu, sliced
1 cup bean sprouts
1/2 cup unsalted peanuts, crushed

Recipe Directions for Pad Thai

  1. Optional garnishes: sprigs of fresh cilantro, fresh chilies, and lime wedges

  2. Soak rice noodles in cold water for at least 1 hour (noodles can be soaked longer and even overnight). Drain all water and set aside.

  3. In a bowl, combine sugar, lime juice, fish sauce, rice vinegar and paprika (optional). Set aside. Heat 1 Tbs. oil in a wok or frying pan; cook 1 well beaten egg until scrambled. Remove and set aside. In the same wok or frying pan, heat 2 Tbs. vegetable oil. Add chopped garlic and sliced chicken, prawns, vegetables or tofu. Stir-fry for 1 minute. Add pre-soaked, strained rice noodles and sauce mixture. Stir-fry for 3-5 minutes or until all ingredients are well cooked. Add bean sprouts, crushed peanuts and scrambled egg. Mix well to combine. Serve immediately with lime wedges, cilantro and fresh chilies. Serves 4.
