Pad Thai Recipe

Not very authentic. But fast and easy. From Rory Freedman and Kim Barnouin's "Skinny Bitch in the Kitch" The honey is actually supposed to be agave nectar, but the recipe analyzer couldn't find it. If you don't have tamarind you can use ketchup.

Recipe Ingredients for Pad Thai

6 ounces rice noodles
1/4 cup honey
1/4 cup mirin
3 tbsp tamarind pulp
3 tbsp soy sauce
1 1/2 tbsp lime juice
1 tbsp sriracha
2 tbsp coconut oil
1 tbsp almond butter
1/2 medium onion
2 cloves garlic
3 scallions
1 carrot
10 ounces broccoli
1/4 cup chopped fresh cilantro

Recipe Directions for Pad Thai

  1. Cook noodles according to package directions. Drain and set aside.

  2. Meanwhile, in a small bowl, whisk together the agave, mirin, ketchup, soy sauce, lime juice, and sriracha. Set aside.

  3. Heat the oil in a 12-14in wok or skillet over high. Add the onion and stir-fry for 30 seconds. Add the garlic and stir-fry for 30 seconds.

  4. Add carrot and broccoli. Cover and steam for 7-10 minutes, until broccoli is tender-crisp.

  5. Add noodles and agave nectar mixture stir-fry until noodles are softened and evenly coated ith sauce.

  6. Add scallions and stir-fry until all ingredients are well combined and heated through.

  7. Serve on individual plates. Garnish with cilantro.
