Pad Thai with peanuts, egg, and bean sprouts

Recipe Ingredients for Pad Thai w/ Peanuts

5 servings
4 tbsp Pad Thai Sauce
5 chicken thigh, bone removed
1/2 cup green onions
1 tbsp garlic, chopped
1/2 cup cilantro, chopped
1 cup bean sprouts
2 eggs
1/2 cup peanuts, unsalted, crushed

Recipe Directions for Pad Thai w/ Peanuts

  1. Place Rice Stick in hot water to soak until pliable, set aside.

  2. Chop green onions into 1 inch pieces, set aside.

  3. Finely Chop cilantro, set aside.

  4. Heat small amount of cooking oil in pan. Add garlic and sauté for 1-2 minutes.

  5. Add chicken and cook until outside of chicken is done.

  6. Add rice stick, continue to stir-fry until noodles are sticky and tangled.

  7. Add Pad Thai sauce.

  8. Lower heat to medium low, move noodle mixture to one side of pan. Crack eggs onto open space and cook until just done. Mix with noodles.

  9. Raise heat to medium, add green onions, bean sprouts, peanuts and half of the cilantro.

  10. Stir Fry for 3-4 minutes or until green onions are slightly wilted.

  11. Garnish with additional crushed peanuts and cilantro.
