Pad Thai, probably the best known of all Thai noodle dishes, takes only 5 minutes to cook. Use thick ribbon-like rice noodles for authenticity.

Recipe Ingredients for Pad Thai Noodles (New Vegetarian p. 74)

1/4 cup sunflower oil
4 eggs
227 grams rice noodles
200 grams kale
1 tbsp lemon juice
1/2 cup ketchup
0.33 cup soy sauce
200 g carrot
300 g bean sprouts

Recipe Directions for Pad Thai Noodles (New Vegetarian p. 74)

  1. Heat a wok until very hot, then add the oil. Add the eggs and noodles and stir fry for about 2 minutes until the eggs are lightly scrambled.

  2. Add the remaining ingredients and stir fry for a further 3-5 minutes, until the noodles are cooked.

  3. Top with chopped peanuts, scallions and cilantro leaves.
