Low sodium alternative to popular Thai noodle dish

Recipe Ingredients for Pad Thai - Low Sodium

4 oz dry Whole Wheat Spaghetti or linguini
4 clove Garlic, chopped
1/2 cup Egg Beaters
1/4 cup Tamarind paste
6 oz Raw Peeled Gulf Shrimp
1 tbsp Roasted Peanut Oil
3 large Onions, Spring Or Scallions
1 oz Peanuts, All Types, Dry-roasted

Recipe Directions for Pad Thai - Low Sodium

  1. Cook pasta in unsalted water until just al dente. Drain and reserve.

  2. Pour half the oil into the wok, add egg beaters and scramble until soft. Remove and reserve.

  3. Add remaining oil to wok. Add garlic and stir fry 30 seconds, add shrimp and stir fry until just losing pink color. Add white part of scallions along with tamarind sauce and stir to mix. Add reserved pasta and egg and stir to incorporate all elements.

  4. Garnish with green part of scallions (1 inch, julienned), chopped peanuts and bean sprouts (optional).
