Thai Chicken, Broccoli, and Rice Noodle Stir Fry. The recipe is done by sight, the measurements are guidelines, as I go by taste. 2 chicken breasts 4 cups broccoli cut close to flower 4 whole green onions (sliced @ angle) 3-4 cloves garlic 16 oz wide, plain rice noodles (best to get cooked ones that sit on shelves at Asian markets, but don't get the ones with shrimp/scallion in them) 2-3 tsp sesame oil 4 tablespoons canola oil 1/4 tsp white pepper Red Chili Pepper to taste (I usually do about 1/8 tsp) 2 eggs 2 tbl dark soy sauce 2 tsp soy sauce

Recipe Ingredients for Pad Siew

1 cup, chopped Broccoli
1 medium (4-1/8" long) Onions, Spring Or Scallions
1 clove Garlic
1 tsp Soy Sauce
0.2 serving Dark Soy Sauce
0.4 cup, chopped or diced Chicken, Breast, Meat Only
4 oz Rice Noodles, Cooked
2 2 tsp 100% Pure Canola Oil
0.25 1tsp Oil, Sesame

Recipe Directions for Pad Siew

  1. Cut chicken in small slices, put into bowl with sesame oil, garlic, and a sprinkle of red pepper flakes. Let marinate 15-30 (or however long it takes to chop & cook the rest.)

  2. Med heat pan, add 1-2 tbl canola oil, fry very small bits of broccoli for 3-4 minutes, stir until bright green. Add in green onions and let wilt. Put into bowl.

  3. Put a tbl canola oil in pan and pull apart strings of rice noodles, stir to coat in oil. Add 1.5 tbl dark soy sauce, and 2 tsp soy sauce, stir and let noodles crisp here and there, but no too much. Most noodles should still be soft. Put noodles in broccoli bowl.

  4. Put 1-2 tsp sesame oil into pan and put in chicken, let cook until almost done (will cook pretty fast if sliced thin enough). Scramble egg with a touch of soy sauce and let it cook until chicken and egg are cooked (but not too dry).

  5. Add back in the other set aside ingredients, stir, and put in rice vinegar, white pepper, or more dark/light soy sauce to taste. Enjoy!
