Red pepper soup recipe from the P90X Nutrition Plan, Phase 1: Fat Shredder. 2 cups white wine 1 onion, finely chopped 5 roasted red peppers 2 cups celery, chopped 1 tablespoon garlic, minced 2 plum tomatoes, chopped 1/4 cup tomato paste 2 cups fat-free chicken broth, low-sodium 2 tablespoons dried thyme 1/4 teaspoon white pepper 1/4 teaspoon ground cumin dash salt

Recipe Ingredients for P90X - Soups - Red Pepper Soup

16 oz Wine, Table, White
1 medium (2-1/2" dia) Onions
5 oz Roasted Red Peppers
2 cup, diced Celery
1 tbsp Minced Garlic
2 medium raw Plum Tomato
0.25 cup Tomato Products
2 cup Light
2 tbsp, leaves Thyme, Dried
0.25 tsp Pepper, White
1/4 tsp Cumin
1 dash Salt, Table

Recipe Directions for P90X - Soups - Red Pepper Soup

  1. Heat wine in a large, heavy soup pot over medium heat.

  2. Add onion, red peppers and celery, cook 3 minutes.

  3. Add garlic, cook 2 more minutes, adding wine if necessary.

  4. Add tomatoes, tomato paste and broth; cover, bring to a boil, reduce heat and simmer for about 25 minutes.

  5. Puree.

  6. Return to the pan, add seasonings and heat through.

  7. If desired, add protein powder just before serving.
