1.5 cups 8 egg whites salt and pepper to taste 3/4 cup mushrooms, sliced 2 Tbsp. geen onion, chopped 3 oz lo-fat shredded cheddar cheese

336 grams (1.5C) Eggs
3/4 cup, pieces or slices Mushrooms
1/8 cup chopped Green Onions
1/2 medium raw Tomato Roma
0.75 cup, shredded Colby Cheese
1 dash Salt & Pepper

Recipe Directions for P90X - Phase 1 - Level 2 - Day 1 - Breakfast - Mushroom Omelet

  1. Beat egg whites and season with salt & pepper to taste.

  2. Coat a pan with non-stick spray and cook all vegetables until tender.

  3. Add eggs and cook until set on bottom.

  4. Sprinkle the cheese on top.

  5. Fold egg in half and cook until cheese is melted and eggs are set.
