Relatively healthy muffins with a little egg white for protein. Full credit to P90X.

Recipe Ingredients for P90X Granola Pear Muffins

3/4 cup canned pear nectar
2 egg whites
2 tbsp vegetable oil
1 tbsp lemon juice
1 tsp lemon peel, grated
1 cup Whole Wheat Pastry Flour
1 cup unbleached all-purpose flour
2/3 cup brown sugar, packed
1/2 cup Granola
1 tbsp baking powder
1/2 tsp ground nutmeg
1/2 tsp salt
1 cups pear, chopped

Recipe Directions for P90X Granola Pear Muffins

  1. Preheat oven to 350F.

  2. Whisk together first five ingredients.

  3. Stir both flours and sugar in a medium bowl until no lumps remain.

  4. Mix in granola, baking powder, nutmeg, and salt. Add pear; toss to coat. Stir flour mixture into egg mixture until blended (batter will be thick). Divide among 12 muffin cups.

  5. Bake until golden brown and tester inserted into centre comes out clean (about 20 min.). Transfer muffins to rack to cool.
