Recipe Ingredients for P. S.'s Veggie Black Bean Burrito

4 whole wheat tortillas
2 cups black beans, canned (1 can)
2 cups water
1 tsp garlic clove
1/4 chopped onion
1/2 tsp cumin powder
1/2 tsp ginger powder
1/4 tsp salt
1 tbsp olive oil
1/2 tsp low fat sour cream
1/2 cup reduced fat cheddar cheese
4 cups raw uncooked spinach

Recipe Directions for P. S.'s Veggie Black Bean Burrito

  1. Saute onions and garlic in olive oil in pan. Rinse and strain liquid from canned black beans. Mash black beans and mix into the garlic and onions. Add in water and continue to mash beans. Add spices. Cook until desired consistency.

  2. Toast tortillas. Add a layer of beans on tortilla, a dab of sour cream, two pinches of cheese, and spinach. Roll into a burrito. Enjoy.
