(oxtail is used but couldn't find calorie count for those so I just used the beef count.) Wonderful soup for a rainy day.

Recipe Ingredients for oxtail soup

1 large potatoe
1/2 med onion
1 stalk celery
12 oz stewed tomatoes
1 carrot
1 lb beef

Recipe Directions for oxtail soup

  1. Tail, onion and celery with 1 qt water and seasoning to choice.

  2. Cooked on low in crock pot all night. Vegetables are added in the morning and simmer all day.

  3. Fat can be skimmed off before serving.
