Quick to make the night before. Scoop and serve in the morning. Add 1/4 tsp vanilla and a pinch of cinnamon if desired. Change the fruit, add a banana in the morning to your bowl, or mix up the seeds. This can be a different taste every morning.

Recipe Ingredients for Overnight Quinoa Cereal

1/2 cup large flake rolled oats
1/4 cup quinoa flour
1 cup yogurt
1/2 cup sunflower seeds
1/2 cup dried apricots, chopped
1/4 cup almonds, chopped

Recipe Directions for Overnight Quinoa Cereal

  1. In a medium bowl mix together rolled oats, quinoa flour, sunflower seeds, and chopped almonds.

  2. In a small bowl mix together yogurt and apricots.

  3. Add the yogurt mixture to the rolled oat mixture. Blend well.

  4. Cover and refrigerate overnight.

  5. Scoop into bowls to serve.
