Overnight Oats Recipe

Makes 3 servings



Cuts cooking time for steel cut oats. Prepared oatmeal can be refurigerated for up to one week. Rewarm in microwave oven and thin with water (or almond milk) if necessary before serving.

Recipe Ingredients for Overnight Oats

1 1/2 cups steel cut oats
6 cups water
1 tsp sea salt
1/4 cup chopped almonds
1/2 cup dried cranberries
6 tbs brown sugar

Recipe Directions for Overnight Oats

  1. The night before, bring water to boil, stir in oatmeal, and let boil for 1 minute. Turn off the heat and cover. Leave overnight.

  2. The next morning, uncover the oats and bring to a boil over high heat. Reduce heat to low and simmer, stirring frequently, about 10 minutes, or until oatmeal is cooked and creamy but still a little chewy.

  3. Stir in the salt, cranberries and almonds.

  4. Spoon into bowls and sweeten each with 2 tbs brown sugar*, or honey or maple syrup.
