This is a hearty gluten free waffle recipe that can be eaten right from the griddle or frozen and later used as toaster waffles.

Recipe Ingredients for Overnight Oat Waffles (Gluten Free)

2 1/2 cups oats
1 cup 1% milk
1 cup water
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 eggs, beaten
3 tbl flax seed, ground
1 tsp vanilla

Recipe Directions for Overnight Oat Waffles (Gluten Free)

  1. Put the oats in a food processor or blender until they are a mixture of oats and flour. Pour into a large bowl, add milk and water, stir and let sit overnight.

  2. Add all the other ingredients listed, plus one more cup of water. Stir and then let sit for 15 to 20 minutes.

  3. Heat waffle iron. A little over one cup of the batter makes one large waffle. A serving is one-fourth of a waffle (one square).

  4. I make 3 to 4 batches at one time. As each cooks, I place it on a cooling rack. When waffles no longer give off heat, I cut them into servings, place on cookie trays and freeze them. Then I place them in large freezer ziplock bags. I toast one at a time for a great breakfast!
