Recipe Ingredients for Over-the-top Bran Muffins with Pear

60 g all-bran
50 g wheat bran
375 g low-fat yoghurt
240 g wholemeal flour
12 g canderel sweetener
1 tbsp baking powder
2 tsp baking soda
125 ml Milk, Producer, Fluid, 3.7% Milkfat
60 ml canola oil
1 egg
1 tsp vanilla extract
3 pears, cored and chopped

Recipe Directions for Over-the-top Bran Muffins with Pear

  1. Combine cereal, wheat bran and yoghurt in a bowl and let stand for 10 minutes

  2. Combine flour, sweetener, baking powder, baking soda and salt in a large bowl.

  3. Add milk, oil, egg and vanilla to bran mixture and stir to combine.

  4. Pour the bran mixture over the flour mixture and stir until just combined.

  5. Stir in the pear.

  6. Divide batter among 12 paper lined muffin cups.

  7. Bake in a 190 C oven for about 25 minutes or until golden and the tops are firm to the touch.

  8. Let the pan cool on a rack for 5 minutes.

  9. Remove from the pan and let cool off completely.
