Recipe Ingredients for Over the top Bran buffins with pear

1 c all bran
1 c wheat bran
1 1/2 c plain nonfat yogurt
2 c graham flour
1/2 c brown sugar substitute
1 T baking powder
2 t baking soda
1/4 t salt
1/2 c skim milk
1/4 c canola oil
1/4 c egg substitute
2 t vanilla
2 pears

Recipe Directions for Over the top Bran buffins with pear

  1. combine cereal and wheat bran in bowl. Stir in yogurt and let stand 10 min.

  2. In separate bowl combine flour, brown sugar, baking powder, baking soda and salt

  3. Add milk, oil, egg, vanilla to bran mixture and stir. Pour over flour mixture and stir. Stir in pears

  4. Preheat oven to 375

  5. Divide batter into muffin pan. Bake until tops are golden and firm to touch, about 25 min. Let cool on rack for 5 min.

  6. Keep covered at room temp for up to 2 days or frozen up to 1 month.
