Easy use of cheaper cuts of steak/beef

Recipe Ingredients for Oven swiss steak

1 1/2 lbs beef round steak, cut into serving size pieces
1/4 cup all purpose flour
1 tsp salt
2 tbsp olive oil
2 cups tomatoes, red, ripened, in can with green chiles
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
1 poblano pepper, roasted (optional)
1/2 cup fresh mushrooms, sliced
1/2 tsp worcestershire sauce (optional)

Recipe Directions for Oven swiss steak

  1. Combine flour and salt; pound 2 tbsp of mixture into the meat.

  2. Brown meat on both sides in olive oil.

  3. Transfer meat to a 12 x 7.5 x 2 inch baking dish.

  4. Blend remaining 2 tbs flour mixture into pan drippings.

  5. Stir in undrained tomatoes, celery, carrot, pepper and worcestershire sauce.

  6. cook and stir until thickened and bubbly; pour over meat.

  7. Bake, covered at 350 degrees F until tender, about 1 hour & 20 mins.

  8. alternate:

  9. Put tomatoes, celery, carrot, etc in bottom of 4-6 qt pressure cooker.

  10. Place meat on top of veggies.

  11. Add 1/2 cup water to mixture.

  12. Pressure cook for 30 mins, until tender.
