Recipe Ingredients for Oven Roasted Veggies

2 lb. yukon gold potatoes
1 lb yams
3 carrots
1 med. onion
1 red pepper
1 green pepper
3 small squash
1 zucchini
3 tbsp. olive oil or vegetable oil

Recipe Directions for Oven Roasted Veggies

  1. Cut all veggies into bite size pieces. Coat with olive oil and spices/herbs.

  2. Place in 400 degree oven for about an hour or until tender, stirring occasionally.
