Recipe Ingredients for Oven Roasted Vegetables

8 ounces red pepper
8 ounces yellow pepper
8 ounces zucchini
8 ounces summer squash
1 cup onion, chopped
8 ounces asparagus, chopped
1/8 cup olive oil
1/4 teaspoon salt
1/4 teaspoon pepper

Recipe Directions for Oven Roasted Vegetables

Slice all veggies into bite-sized chunks and place in large, oven-safe dish. Add olive oil, salt and pepper. Toss to coat. Bake at 450 for 30 minutes.
