Vegetables roasted in the oven at high temperature until all flavours meld together

Recipe Ingredients for Oven Roasted Vegetables

4 tbsp olive oil
2 large onions
1 large eggplant
4 zucchini
5 med Tomatos

Recipe Directions for Oven Roasted Vegetables

  1. Saute onion in 2 tbsp olive oil.

  2. Thinly slice the rest of the vegetables and layer them over the onions. Make sure that the tomatoes are the top layer. Drizzle the rest of the olive oil over the top. Bake at 400 for 2 hours. Cover if veggies start to burn.
