Recipe Ingredients for Oven Roasted Vegetables

2 cups Squash, Summer, Crookneck And Straightneck
2 cups Squash, zucchini baby
1/2 green pepper
1/2 red pepper
1/2 yellow pepper
2 small red potatoes, 274 grams
1 red onion
6 mushrooms
2 teaspoons olive oil
1 teaspoon Italian seasoning
1 teaspoon garlic, minced

Recipe Directions for Oven Roasted Vegetables

Cut all of the vegetables into bite size pieces. Put into a large bowl and add the olive oil and garlic. Toss to coat. Sprinkle on the Italian seasoning and any other spices that you like. Spray a cookie sheet with cooking spray and pour all of the vegetables in. Bake at 400 for 1/2 hour or until tender turning often.
