Great way to eat winter root veggies.

Recipe Ingredients for Oven Roasted Root Veggies

2 cup slices Parsnips
2 cup, cubes Turnips
3 skin Potatoes
2 cup, chopped Carrots
2 tbsp Olive Oil

Recipe Directions for Oven Roasted Root Veggies

  1. Preheat oven to 375F.

  2. Make sure all veggies are cut to similar size pieces.

  3. Place oil in large shallow baking pan. Add favorite dried herbs

  4. Add veggies, tossing to coat.

  5. Roast in oven until veggies are soft and have started to brown, about 40 minutes.
