Recipe Ingredients for Oven Roasted Root Vegetables

400 g sweet potatoes
200 g parsnips
200 g carrots
350 g onion
400 g beets
50 g olive oil

Recipe Directions for Oven Roasted Root Vegetables

  1. Cube or slice the vegetables so they are approximately the same thickness.

  2. Toss with olive oil

  3. Bake at 400F for about 30-40 minutes.

  4. Toss vegetables occasionally to make sure they are coated with oil and juices.
