Makes 4 servings



A small side dish that can be expanded as needed. Makes two large sides or 4 small sides.

Recipe Ingredients for Oven Roasted Red Potatoes

2 medium red potatoes
1/2 sweet onion
6 cloves of garlic
1 tsp rosemary
1/2 tsp black pepper
1 salt to taste
1 tbls olive oil

Recipe Directions for Oven Roasted Red Potatoes

  1. Turn oven to 425

  2. Line a baking pan with parchement paper or foil

  3. cube red potatoes into large shapes

  4. Cut up the onion in big pieces

  5. put potatoes and onion in the baking sheet and add the rosemary, salt and pepper. Drizzle with oil and mix to coat.

  6. Cover and bake for 20 minutes

  7. uncover and add the whole, skin on, garlic cloves, turn potatoes and bake uncovered for 20-25 more minutes. The garlic will be roasted without burned and they can be squeezed out of their skins and eaten whole or just on top of the potatos.
