Great tasty side dish and the secret is the red peppers.

Recipe Ingredients for Oven Roasted Red Potatoes

5 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin, Baked
0.25 cup Olive Oil
0.5 cup, chopped Peppers, Sweet, Red
1 Teaspoon Thyme
1 tsp Sea Salt
0.25 tsp Pepper, Black

Recipe Directions for Oven Roasted Red Potatoes

Cut potatoes into one inch squares. Pour olive oil into 8X13 inch baking pan. Toss in potatoes and coat all sides with oil in pan. Chop up one half of a red pepper and scatter across potatoes. Sprinkle thyme, salt and pepper over potatoes and bake in a 400 degree oven for 30 minutes. Still the potatoes and bake for another 20 minutes. Then stir for a third time and bake for 15 minutes more. Turn the oven off and let potatoes sit for an additional 15 minutes in the oven before serving.
