Even my kids love this one. I usually substitute either No Salt or Mrs. Dash for the salt for a lower sodium dish. Sometimes I add bay seasoning for a kick. This dish is from the Betty Crocker New Dieter's Cookbook.

Recipe Ingredients for Oven-Roasted fries

4 tsp. olive oil
4 medium potatoes, scrubbed
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. grated Parmesan cheese

Recipe Directions for Oven-Roasted fries

  1. Use a baking stone or line a baking pan with oil and brush with 2 tsp of the oil. Set aside.

  2. Cut the potatoes lengthwise into 1/2" wedges. Transfer to a large bowl. Add remaining oil; toss to coat. Sprinkle potato wedges with salt and pepper, tossing to coat. Arrange wedges in a single layer in the prepared pan.

  3. Bake in a 450 degree oven for 14 minutes. Carefully turn wedges; sprinkle liberally with the cheese. Bake for 12-14 minutes more until potatoes are golden and crispy.

  4. Serve immediately.
