This is a nice compliment to any grilled meat or just on top of a salad.

Recipe Ingredients for Oven roasted eggplant and peppers

2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 tbsp Olive Oil
2 cup, cubes Eggplant

Recipe Directions for Oven roasted eggplant and peppers

For the Eggplant, I actually used Pixie Purple Eggplants, cut in half (about 6 of them). I guessed about the quantity for the calorie sake since I couldn't find the nutritional info on the pixie ones. Regular eggplant sliced or cubed would work as well. Chop the eggplant into thick strips. Pour 1 tbls of olive oil onto a cookie sheet (old fashioned jelly roll style). Put the chopped veggies onto the pan and mix with with the oil to cover completely (use your hands). Sprinkle with garlic pepper and italian herbs. Cook on 400 degress for 20+ minutes. The veggies roast up really nice and the eggplant gets almost where you can spread it. If you like them a little crunchy; cook them for a shorter period of time.
