Oven "Fries" Recipe

From my Weight Watchers cookbook. Cut all the potatoes first and soak in water with about 1 tsp each of salt and sugar for 15 minutes prior to preparing and cooking. Be sure to pat potatoes dry before adding cinnamon and brown sugar. (According to the book, it helps to remove some of the starches of the potatoes and helps them brown instead of roasting in the oven.) Takes a little time, but worth it!

Recipe Ingredients for Oven "Fries"

4 cups sweet potatoes, sliced 1/4" thick
1 tsp cinnamon
1 tablespoon light brown sugar, packed
1 tablespoon extra virgin olive oil

Recipe Directions for Oven "Fries"

  1. In a large bowl, gently toss potatoes, cinnamon and brown sugar until evenly coated.

  2. Spread evenly on a cookie sheet and bake at 450 for 45 minutes, turning potatoes once halfway through baking. (Keep an eye on them the last 10-15 minutes though.)
