Recipe Ingredients for Oven Fries with Coriander

2 pounds red potatoes
2 tablespoons olive oil
1 1/2 teaspoons coriander seeds
1 1/2 teaspoons thyme
1 teaspoon salt
1 teaspoon pepper

Recipe Directions for Oven Fries with Coriander

  1. Preheat oven to 450 F

  2. Cut potatoes into half in thick sticks.

  3. Spray large rimmed baking sheet with non-stick spray.

  4. Toss potatoes with olive oil, coriander seeds, and thyme in large bowl.

  5. Transfer to prepared sheet, spreading in single layer.

  6. Sprinkle with salt and pepper.

  7. Place in top third of oven and bake until golden, occasionally turning with spatula, about 40 minutes.

  8. Season to taste with coarse sale and serve.
