Oven-Fried Zucchini Recipe

This oven-baked zucchini tastes every bit as good as the deep-fried brethren version with only a fraction of the fat and calories. Serve with a side of your favorite marinara sauce or ranch dressing for dipping.

Recipe Ingredients for Oven-Fried Zucchini

4 medium squash, summer, zucchini
2 large Egg, White
60 sec spray Cooking Spray
1/2 cup Bread Crumbs Plain
1/2 cup All Purpose Flour
2 tbsp Cornmeal
1 tbsp Garlic Powder

Recipe Directions for Oven-Fried Zucchini

Preheat oven to 475F. Coat a large baking sheet with cooking spray. Combine flour, bread crumbs, cornmeal, salt and pepper in a large sealable plastic bag. Cut zucchini into rounds or sticks and dip in egg white, shake in bag to coat, and arrange, not touching, on the baking sheet. Coat all exposed sides with cooking spray. Bake on the center rack for 10 minutes. Turn the zucchini and coat exposed sides with cooking spray. Continue to bake until golden and just tender, about 8 to 10 minutes more. Serve hot.
