Recipe my mom found somewhere and passed on to me. Great as a side dish to chicken. You can also add some bell peppers, but they get very soft in the cooking process which I didn't enjoy. Very adaptable.

Recipe Ingredients for Oven Fried Rice

1 cup long grain white rice
1/8 cup low sodium soy sauce
1/8 cup olive oil
6 mushrooms
1 cup broccoli
2 tablespoons onion powder
1 3/4 cup water
1 bouillon cube

Recipe Directions for Oven Fried Rice

  1. mix all ingredients together, stirring thoroughly (it doesn't matter if the vegetables stay on top, it's important to mix the oil/soy/powder with the water and the rice)

  2. bake for 1 hour at 350 degrees
