Mexican squash coated with bread crumbs and a spicy kick are baked in the oven, much healthier than fried.

Recipe Ingredients for Oven "Fried" Mexican Squash

4 cup Mexican Squash
4 serving Bread Crumbs Italian Style
2 tbsp Garlic Powder
2 tbsp Onion Powder
3 serving Ground Red Pepper Spice
1/4 tsp Pepper, Black

Recipe Directions for Oven "Fried" Mexican Squash

  1. Preheat oven to 375F.

  2. Slice the squash into desired thickness. Spray with cooking spray.

  3. In a large bowl mix together the bread crumbs, onion powder, garlic powder, black pepper and the red pepper.

  4. Working in batches coat each squash slice with the breadcrumb mix and place evenly on a baking sheet. Spray the tops with more cooking spray and bake 20-30 minutes or until desired crispness.
