A skinnier version of fried chicken. The crumb coating keeps the chicken moist and the cinnamon adds an unexpected flare. Add cumin for a more Moroccan taste.

Recipe Ingredients for Oven-Fried Cinnamon Chicken

1 cup plain dried bread crumbs
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1 tablespoon olive oil
1/2 cup all-purpose flour
1 large egg, beaten
1 1/2 pounds boneless, skinless chicken breasts

Recipe Directions for Oven-Fried Cinnamon Chicken

  1. Preheat the oven to 450 degrees. Line a large baking sheet with parchment paper

  2. Combine the bread crumbs, onion powder, garlic powder, cinnamon, half the salt, half the pepper, and the olive oil in a shallow dish and mix together. Place the flour in another shallow dish. Place the egg in another shallow dish and beat lightly.

  3. Season the chicken with the remaining salt and pepper. Coat each breast in flour and shake off the extra. Then dip in the egg. Lastly, dredge in the crumb mixture. Place the chicken on the prepared pan.

  4. Bake until the chicken is golden and cooked through; about 15 minutes.
