Basic Recipe, but play around with spices: Tandoori spices: cinnamon, coriander, cumin, ginger, cayenne, sugar, salt and pepper, paprika, tumeric Thai: instead of Fage, marinate in Fish sauce, lime, and chilli

Recipe Ingredients for Oven-Fried Chicken

8 oz chicken thighs
2 tblsp buttermilk
1 garlic clove, minced
1 coarse salt and ground pepper
1/4 cup Panko
1 vegetable oil spray

Recipe Directions for Oven-Fried Chicken

  1. Using a paper towel to grip, remove skin from chicken. In a large bowl, toss chicken with buttermilk, garlic, 2 teaspoons salt, and teaspoon pepper. Marinate at room temperature 30 minutes (or refrigerate up to overnight).

  2. Set a wire rack over sheet.

  3. Preheat oven to 425

  4. Working with one piece at a time, lift chicken from yoghurt mixture (letting excess drip off) and dredge in Panko, pressing firmly to adhere. Transfer chicken to rack.

  5. Bake, without turning, until cooked through, 60 minutes, tenting with foil if browning too quickly.
