From Company's Coming - Rookie Cook. I think the fat should be a little lower because I took the skin off of the drumsticks, but couldn't get it to work that way. Used 25 drumsticks, one serving is two legs.

Recipe Ingredients for Oven-Fried Chicken

1/2 cup margarine
2 tsp parsley flakes
1 tsp thyme
1 tsp tarragon leaves
1 tsp salt
1/2 tsp pepper
1/2 cup light parmesan cheese
1 cup (crushed) corn flakes
2579 g drumsticks, (skin removed)

Recipe Directions for Oven-Fried Chicken

  1. Microwave margarine in a shallow microwave-ssafe bowl on high (100%) for about 30 seconds until melted. Add parsley, thyme tarragon, salt and pepper. Stir.

  2. Combine cereal and parmesan cheese in separate shallow bowl.

  3. Dip each drumstick into margarin mixture. Press into cereal mixture to coat completely. Arrange on greased foil-lined baking sheet. Bake in 400F oven for 40-45 minutes until juices run clear.
