Recipe Ingredients for Oven-fried chicken

1 cup lowfat buttermilk
3 tsp dijon mustard
1 tsp salt
1 tsp garlic powder
1 tsp tobasco
24 oz boneless skinless chicken breasts
1 1/4 cups cornflakes cereal
1/2 cup bread crumbs
1/4 tsp poultry seasoning
1/4 tsp paprika
1/4 tsp cayenne pepper
1 tbsp canola oil

Recipe Directions for Oven-fried chicken

  1. Combine buttermilk and seasonings. Add chicken to mix and soak at least one hour.

  2. Heat oven to 400. Combine cornflakes, bread crumbs, remaining seasonings. Drizzle oil over mixture.

  3. Dredge chicken in crumb mixture and press to coat.

  4. Bake 35-40 minutes or until 160 degrees.
