MODIFIED from the original recipe on The Food Network. All skin and fat removed. Calories will be lower as there will be ingredients remaining after each coating. Note: The "1 Breast" refers to the "full double breast" cut from a fryer before splitting at the breast bone. All calories accounted for. Servings: 1/2 Breast, 1 Thigh, 2 Legs, 2 Wings, or Wings and Leg combo.

Recipe Ingredients for Oven-Fried Chicken

2 yield from 1 lb ready-to-cook chicken Chicken, broilers or fryer thigh
2 drumstick, bone and skin removed Chicken, Drumstick, Meat Only
2 yield from 1 lb ready-to-cook chicken Chicken, broilers or fryer wing
1 breast,+bone+and+skin+removed fryers
1/2 cup Gold Medal All Purpose Flour
0.67 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
5 1/2 cup Corn Flakes
1 tsp Paprika
1/4 tsp Pepper, White
1/2 tsp Salt
1/4 tsp Cayenne
1/2 tsp Marjoram, Dried
1 tsp Poultry Seasoning
6 tsp Dijon Mustard

Recipe Directions for Oven-Fried Chicken

  1. Preheat oven to 425.

  2. 1. Coat each washed piece of chicken with flour and tap off excess.

  3. 2. Finely crumble corn flakes to the consistency of bread crumbs.

  4. 3. Mix buttermilk, mustard, and seasonings in a bowl.

  5. 4. Coat floured chicken with buttermilk mixture, then corn flakes.

  6. 5. Arrange all pieces on a baking rack and pan.

  7. 6. Bake for 15-20 minutes.

  8. 7. Reduce heat to 375, and bake an additional 25-30 mins, or until fully cooked and crispy.

  9. Serve immediately.
