My kids love this one with rice and peas

Recipe Ingredients for Oven fried chicken legs

1/8 cup margarine
1/2 cup flour
1 tbsp paprika
1 tbsp salt
3 lb chicken legs (8 legs)

Recipe Directions for Oven fried chicken legs

  1. Melt margarine in a rectangular dish while pre-heating the oven to 425.

  2. Meanwhile, mix flour, paprika and salt in a zip-lock bag, shake to mix thoroughly.

  3. Add chicken to bag, shake to coat.

  4. Place chicken in hot margarine in pan, skin side down, bake 20 minutes.

  5. Turn chicken skin side up, bake additional 20-25 minutes, or until skin is golden and crispy, and juices run clear.

  6. *serving suggestion: Serve with brown rice. The cooking time is the same, and my kids like the way it tastes when I put the rice in the dish after removing the chicken, to soak up all the juices and scrape up the brown bits. Then I toss in some frozen peas to add extra nutrition, it also cools the rice so as not to burn their little tongues!
