A low-cal alternative to pan-fried chicken. I use Mrs. Dash Garlic and Herb for the "Seasoning Blend". Chicken is boneless, skinless chicken breasts.

Recipe Ingredients for Oven Fried Chicken Fingers

1 Cooking Spray
1 pound Chicken
1/2 teaspoon Seasoning Blend
1/3 cup all purpose flour
3 oz. Fat-Free Buttermilk
1/2 cup Chex Rice

Recipe Directions for Oven Fried Chicken Fingers

  1. Preheat oven to 350 F. Lightly coat a 13x9 inch baking sheet with non-stick spray.

  2. Cut chicken into strips. Set aside. Crush cereal into crumbs and set aside.

  3. Season chicken with half the seasoning.

  4. Combine flour and remaining season in shallow bowl.

  5. Place buttermilk and crumbs in two separate bowls.

  6. Dredge both sides of all the chicken fingers in the flour mixture.

  7. Coat both sides of all chicken fingers in the buttermilk.

  8. Dreged both sides of the chicken fingers in the cereal crumbs.

  9. Place on cookie sheet and bake 25-30 minutes or until the juices are running clear.
