Oven-Fried Bean and Chicken Chimichangas Recipe

Makes 6 servings



Adapted to be healthier than regular chimichangas. You could make a batch of these, freeze them just before baking. When ready to eat, take out of the freezer, spray with Butter spray and bake. If frozen, it might take a little longer to heat through.

Recipe Ingredients for Oven-Fried Bean and Chicken Chimichangas

2/3 cup picante sauce or your favorite salsa
1 teaspoon ground cumin
1/2 teaspoon dried oregano leaves, crushed
1 cup pinto beans, cooked & pureed
1/2 cups cooked chicken, chopped
1 cup 2% Cheddar Cheese, shredded
2 green onions, chopped with some tops (about 1/4 cup)
6 low carb tortillas, (8 inch)
2 Pam cooking Spray, Butter flavored
1/2 c. shredded 2% cheddar cheese, for serving
1 chopped green onions, for serving
1/2 c. picante sauce, for serving

Recipe Directions for Oven-Fried Bean and Chicken Chimichangas

  1. 1. Mix beans, chicken, picante sauce or salsa, cumin, oregano, cheese and onions.

  2. 2. Place about 1/4 cup of the chicken mixture in the center of each tortilla.

  3. 3. Fold opposite sides over filling.

  4. 4. Roll up from bottom and place seam-side down on a baking sheet.

  5. 5. Spray with Butter Spray.

  6. 6. Bake at 400F for 25 minutes or until golden.

  7. 7. Garnish with additional cheese and green onion and serve salsa on the side.
