Recipe Ingredients for OVEN-BAKED MUSHROOM FRITTATA

15 g butter
1 tablespoon olive oil
500 g mushrooms, washed and sliced
2 garlic cloves
1 pinch of salt and pepper
6 eggs, whisked
28 g Gruyere cheese, finery grated

Recipe Directions for OVEN-BAKED MUSHROOM FRITTATA

  1. Preheat the oven to 200C (400F) Gas Mark 6. Line a shallow 23 x 33cm (9 x 13in) tin with a strip of non-stick baking paper to cover the base and sides.

  2. Heat the butter and oil in a large saucepan. Put in the mushrooms and garlic and fry over the heat for 10-15 minutes until they are tender and any liquid that they produce has boiled away. Season with salt and pepper.

  3. Spread the mushrooms evenly over the base of the tin, on top of the paper.

  4. Season the beaten eggs, then pour them over the mushrooms.

  5. Sprinkle the grated cheese over the top.

  6. Bake for about 15 minutes, or until set, lightly browned and puffy. Cut into 12 pieces and eat hot or cold.
