Oven-baked, a healthy approach to Crab Cakes

Recipe Ingredients for Oven-baked Crab Cakes

6 slices Bread
1/4 cup Onion, finely chopped
1/4 cup Red Pepper, finely chopped
1 clove Garlic, finely minced
1 tbsp Parsley, chopped
1 tbsp Lemon juice
1 tsp Tabasco
1/4 tsp Black Pepper, freshly ground
1 tsp Old Bay seasoning
6 oz Crabmeat, slightly diced
1 large Egg, lightly beaten
1 large Egg White

Recipe Directions for Oven-baked Crab Cakes

  1. Preheat oven to 425F (218C). Spray a sheet of parchment paper on a baking sheet with cooking spray.

  2. Place bread in a food processor; pulse 12 times or until coarse crumbs, approximately 2 cups (625 ml). Combine 1 cups (375 ml) of the breadcrumbs and remaining ingredients up to and including egg white; mix well.

  3. It may be necessary to add some more breadcrumbs (make some more as needed, or use packaged) until the patties are able to hold together. After each addition allow the mix to stand for a few minutes to allow added breadcrumbs to absorb excess moisture.

  4. Divide crab mixture into 4 equal patties.

  5. Put the remaining 1 cup (250 ml) of the breadcrumbs into a soup size bowl. Dredge patties, one at a time, in breadcrumbs covering well.

  6. Lightly spray the tops of the crab cakes with cooking spray just before placing in the oven.

  7. Bake for 15 minutes. Garnish with parsley sprigs and serve with lemon wedges.
